Roasted Red Pepper Tomato Soup


  • roast peppers
  • fresh peppers
  • fresh tomatoes
  • garlic
  • 1-2 tbsp olive oil
  • S&P
  • big clump of basil
  • 2 cups liquid stock


  • Add all solid ingredients to roasting dish and drizzle with olive oil
  • Bake for 1h (set timer) at 375F
  • Blend
  • Add liquid ingredients (olive oil, liquid stock) and basil to the blender and blend
  • Heat in pot and serve with fresh baguette (optional)!
